What You’ll Need:

  • Vegetable oil
  • Pork Loin
  • Salt and pepper to taste
  • 1 medium onion
  • 2 carrots
  • Celery
  • Garlic
  • Thyme and rosemary

  • Apples cut into 8 slices with the core removed.
  • Apple cider vinegar

  • Whole grain mustard

What You’ll Do:

First, preheat the oven to 400 degrees. Season pork loin with salt and pepper to taste. Sear the pork until golden brown in a large oven-safe skillet (around 2-3 minutes each side). Set pork aside.

Add the onion, carrot, celery, herbs, garlic and butter to the skillet to brown all vegetables (around 8 minutes). Once this is done, add in the apple and mix together. Remove all ingredients from the skillet and put aside, return skillet to high heat and add apple cider vinegar scraping the bottom to loosen up the browned bits. Reduce and add the cider then reduce again. Whisk in the mustard away from the heat and add in two tablespoons of butter. Add in this sauce over the meat when served.
