4. First Job: Delivered newspapers when I was 12 years old.
5. Your Cookbook: It’s actually in the designing phase. It will feature Wisconsin seasonal products. Think of it as “Hearty but Healthy” comfort cuisine.
6. Your Awards: Numerous medals in competitions over the years. Honorary Faculty Member of the School of Hospitality Business at Michigan State University. LJ Minor Award from the American Culinary Federation.
7. Your Cooking Inspiration: My grandfathers were both amazing cooks. Eating was always an event in our family.
8. Your Speciality Dish: Foie gras French toast with toasted pistachios, Michigan sun dried cherries and citrus caramel.
9. Favorite Dish To Eat: I grew up in the Midwest, so give me a great grass fed organic ribeye please.
10. Weirdest Thing You Ever Ate: Balut – very tasty but just plain wierd!
11. Favorite Ice Cream Flavor: You can’t find it very often, but I am a huge fan of Tin Roof flavor (vanilla ice cream with swirls of chocolate and chunks of chocolate covered peanuts).
12. Favorite Drink: Captain Morgan Rum. Got a little Captain in Ya?
13. Favorite Wine: My favorite “sit back and enjoy” wine is L’Ecole No. 41 Cabernet from their winery in Walla Walla Washington.
14. Who Would You Most Like To Cook For: Would love to hang out with Thomas Keller and Anthony Bourdain for a day or two.
15. Who Would You Least Like To Cook For: I do not enjoy cooking for people that think they deserve to be treated differently because of the size of their wallet. Everyone should be able to enjoy great food prepared correctly.
16. Favorite Things To Do When Not Cooking: Love spending time with my family and cooking for friends.
17. Your Latest Project: Putting in a 2000 sq ft organic garden here at the Spa.
